Southwestern Chili

About the Recipe

Warm your tummy and your heart with this delightful chili recipe!

Ingredients

  • 30 oz. of pace salsa, mild or medium

  • 1 can black beans, drained

  • 1 can kidney beans, drained

  • 1 can corn, drained

  • 1 4 ounce can green chiles

  • 1 onion, chopped

  • 1 green pepper, chopped

  • 1 garlic clove, minced

  • 1 lb ground beef

  • 1⁄4 cup chili powder

  • 1 Tablespoon cumin

  • 1⁄2 teaspoon garlic powder

  • 1 teaspoon fresh ground pepper

  • 1 teaspoon red chili pepper flakes

  • ¼ cup Brown Sugar

  • Chives & Lime slices, garnish.

Optional Ingredients: 

  • Shredded Cheese

  • Sour Cream

  • Chives or Cilantro, garnish

  • Cornbread

  • Saltines or Chips

  • A few Lime juice drops to help cut the heat if its too spicy for your taste.

 

 

Optional Meat:

Can use 1 lb of shredded rotisserie chicken in replacement of ground beef.  Because the chicken is pre-cooked, add to the crockpot in the last hour or two of cooking. 

Preparation

Step 1

Start by dicing the onion, green pepper, and garlic clove.


Step 2

Option 1 (Quick & Easy): Add uncooked beef, all spices, brown sugar, salsa, beans, corn, veggies and chiles into the crockpot.

Option 2 (Aromatic): Brown beef, chilies, diced veggies and spices in a skillet.  Then add to crockpot with all remaining ingredients.


Step 3

Place the lid on the slow cooker and cook on low for 8-10 hours or cook on high for 4-6 hours.


Step 4

Serve with your favorite toppings such as crackers, chips, cornbread, rice, shredded cheese and or sour cream.


Store leftovers in the refrigerator or freezer (after cooling) in 1-gallon freezer sealable bag. Make sure to flatten the bag in the freezer.  Will last up to 6 months in the freezer. Thaw in the refrigerator, warm on stovetop or microwave.
