About the Recipe
These ovel roasted potatoes are a great addition to any meal!

Ingredients
2 pounds red or yellow skinned potatoes
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon parsley
1/2 teaspoon paprika
1/2 teaspoon Red Chili pepper flakes
1 tablespoon Roasted Garlic & Bell Pepper Seasoning
Salt and pepper to taste
Note: Any kind of herb combination or type of potatoes will work in this recipe and peeling potatoes is optional.
Preparation
Step 1
Scrub potatoes (do not peel them). Dice into 1” cubes.
Step 2
If time allows, soak potatoes in cold water for up to 1 hour. (This removes starch and makes for a
fluffier potato). Drain and dry potatoes, if required.
Step 3
Preheat oven to 425°F.
Step 4
Toss potatoes, olive oil, herbs, and seasonings
Step 5
Place on a baking sheet and bake for 30-35 minutes until browned and tender.
