About the Recipe
The hearty TikTok version of homemade grilled cheese and tomato soup.

Ingredients
For the Soup:
2 Cups Cherry Tomatoes, whole
2 Garlic Heads (not individual cloves)
1 Onion, halved
1 Red pepper, cleaned from seeds/stems
1 tsp. chili flakes
1/2 Cup Water
3/4 Cup of Heavy Cream or Coconut Milk
1/4 Cup shredded or flaked of Parmesan Cheese
2 Tbls. Olive Oil
5-10 leaves of Basil, to Taste
1 Tbls. Chili Oil (optional)
Salt & Pepper to Taste
For the Sammies:
Sourdough bread, sliced (I prefer pre-sliced!)
Gouda Cheese or Smoked Gouda
Butter or Mayo to spread on bread before toasting
1 Tbls. Olive Oil
1 tsp. Fresh Parsley, chopped
Preparation
Making the Soup:
Step 1
In a baking dish, place cherry tomatoes, halved garlic heads, onion, red pepper, salt, pepper, chili flakes, olive oil and mix. Bake at 400F for 45-50 min or until vegetables are softened.
Step 2
Transfer the vegetables into a blender. Add Basil and blend. Once smooth, transfer onto a medium size saucepan.
Step 3
Place the saucepan over high- medium heat, add water, heavy cream/coconut milk and mix. Cook for a few minutes and then add parmesan. Lower the heat and cook the soup for about 10 minutes or until it has thickened a bit. Stir often. Â
Making the Sammie:
Step 1
Using a butter knife spread the butter over the bread (only from the outer side of the sandwich).
Step 2
Place the bread slices on a pan or Griddle over medium heat and add the cheese. Gently, place one slice over the other and toast until the bottom bread slice becomes golden brown, flip over and toast the other side.
Step 3
Mix Olive Oil & Fresh Parsley flakes in small container.
Step 4
Once Sammie is ready and toasted, brush olive oil mixture over each slice of toasted bread (on outside buttered side).
Step 5
Serve warm with the tomato soup.
