About the Recipe
Easy, air fryer street corn. This is great when you don't want to warm up the house with your stove.

Ingredients
6 medium ears sweet corn, husks removed
1/2 cup Mexican crema, or sour cream
1/2 cup mayonnaise
1/2 cup chopped cilantro
1 clove garlic, minced
1/4 teaspoon ground hatch red chile powder*, or to taste
2 teaspoons finely grated lime zest, from 1 lime
2 tablespoons lime juice, from 1 lime
1/2 cup cotija cheese, crumbled
1 Tablespoon olive oil
Salt, to taste
Lime wedges, to serve
*Note: There is a difference between chile powder and chili powder. Chile powder is ground chile peppers without any additives. Chili powder is a blend of ground peppers, spices, or salt that is traditionally used to flavor chili.
Preparation
Quick Method: Place the corn in the basket of the air fryer. Rub the olive oil evenly on the corn.
Cook in the air fryer at 370 degrees for 12-15 minutes or until tender. *See grilling instructions below.
Sauce: Whisk together the crema, mayonnaise, cilantro, garlic, chile powder, lime zest, and lime juice. Taste and season the mixture with salt if needed. Set aside.
Toppings: Top the corn with sauce and cheese. Using a brush or a spoon, coat each ear of corn with the crema mixture. Sprinkle with crumbled cotija cheese. Sprinkle with additional chile powder, if desired.
Serve with extra lime wedges.
Authentic Method: Grill the corn (gas or charcoal)
Place the husked corn directly onto grill grates. Grill the corn for about 3 minutes, undisturbed, or until kernels begin to turn golden brown and look charred. Turn over and repeat. When all sides are browned, remove from the grill onto a plate. Then follow steps 3 - 5 and enjoy!
